Almond Butter Chocolate Chip Cookies

I love shopping at Whole Foods Market.  My favorite isle is the baking isle.  I can get herbs and spices, a variety of flours and sugars, chocolate, and nut butters all in the same isle.  The Whole Foods Market in Nashville, Tennessee has in-store nut butter machines.  You can pull the trigger, all by yourself, and watch the nuts get ground into nut butter right before your eyes.  Yes, you can buy almond butter in a jar.  However I especially like using the do-it-yourself machines.  If my recipe calls for 1/2 a cup, all I have to grind out is 1/2 a cup. Speaking of recipes, I digress.

    

What You'll Need:

1 cup unbleached flour

3/4 cup whole wheat pastry flour

1/2 cup almond butter

1/2 cup Earth Balance

3/4 cup dark brown sugar

3 T non-dairy milk

1/2 tsp vanilla extract

1/2 tsp almond extract

3/4 tsp baking powder

1/2 tsp salt

1/2 cup non-dairy semi-sweet chocolate chips

How You'll Do It:

Preheat oven to 375º.

Combine almond butter, non-dairy milk, extracts, sugar, and Earth Balance in a medium bowl.  Cream them together until smooth. In a large bowl, combine flours, baking powder, and salt.  Then combine the wet ingredients into the dry ingredients with a large spoon or wooden spoon.  Once your dough has formed, fold in the chocolate chips.  

Spoon balls of dough onto a large baking sheet.  (No greasing needed)  Once you have filled up one, or two, baking sheets (depending on the size of your dough balls), place them in the oven for 10 minutes.  Allow to cook for three minutes once they're done, then transfer to a cooling rack to cool completely. 

Why You'll Love It:

  These cookies are too delicious not to love!  I put two on a plate for myself to snack on and eventually lost track of how many times I got up for more.  Almonds have more calcium than any other nut, which is one of many health benefits to almonds
